Avocado Toast - 4 Ways

My friends know me for always making elaborate breakfasts, since it’s my favorite meal of the day. Lately, I’ve gotten really into making avocado toast. In it’s simplest form, you just toast a slice of bread to your liking and spread a ripe, mashed avocado on top. However, avocado is an incredibly versatile spread, and can mix with a variety of different flavors. Here’s four of my favorite ways to upgrade the basic avocado toast - all recipes are for two slices of bread, toasted, and with half of a mashed avocado as the spread.

 

1. “Guacamole” Toast

Ingredients:

-Half of a roma tomato, diced

-Minced garlic, to your preferences

-Cilantro Lime Dressing

Spread the avocado on two slices of toast. Honestly, half of an avocado is a lot, but I love having a lot of avocado on my toast, so make sure to follow your preferences. Add a small amount of the minced garlic to the slices. Dice your roma tomato and put some on each slice of toast, and then drizzle the cilantro lime dressing on top. Since I usually make this in the morning before I’m running to work or class, I just use Trader Joe’s bottle, but if you want to make it on your own from scratch, a really good replica recipe is here. If you’re using Trader Joe’s dressing, a little goes a long way.

 

2. Strawberries and Goat Cheese

Ingredients:

-6 or 7 sliced strawberries (or to your liking, I usually go overboard)

-Crumbled goat cheese

Spread the avocado on the toast, put the sliced strawberries facing downwards on the avocado so that they don’t fall off, and then sprinkle the goat cheese crumbles to your liking on top. The goat cheese mixes really well with the strawberries, and the avocado’s cooling taste cuts the strong taste of the cheese.

 

3. Mango Salsa

Ingredients:

-1 cup of finely diced mango

-A teaspoon of salt

-A squeeze of fresh lime juice

-A pinch of cilantro

Mix the diced mango with the lime juice and salt to make the mango salsa. Spread the avocado on the toast and top with the mango salsa, adding a pinch of cilantro on top for garnish and the extra taste.

 

4. Egg & Avocado Toast

Ingredients:

-2 eggs, made sunny-side up (or over-easy if that is your preference)

-Sriracha

-Black pepper, to taste


Spread the avocado on the slices of toast. Top both with an egg sunny-side up. Drizzle sriracha on top for an extra kick, and sprinkle with black pepper on top. The avocado cuts the spiciness of the sriracha, so don’t be afraid of the spicy taste!
